Ingredients-

  • 2 鈥� 3 large onions聽
  • 500 ml chicken broth聽
  • 60 g grated cheese (Gruyere or Comt茅 cheese)聽
  • Knob of butter聽
  • Salt and pepper聽
  • A few slices of farmhouse bread聽

  1. Peel and finely chop the onions. Saut茅 the onions in a knob of butter until golden brown.聽
  2. Add the chicken broth, then salt and pepper.聽
  3. Simmer for 20 to 30 min.聽
  4. Toast the bread slices and cut into medium-sized chunks.聽
  5. Pour the soup in the Gratin bowls. Place the toasted bread chunks on top and sprinkle over the grated cheese.聽
  6. Grill in the oven at 200掳C for a few minutes.聽
  7. Serve immediately.聽

Tip: You can also deglaze the onions with white wine before adding the chicken broth. And for more flavor, add a bouquet garnish to the chicken broth.聽

Ingredients-

  • 2 lb/1kg brisket (or chuck Roast)聽
  • 2 bay leaves聽
  • 4 medium-sized carrots聽
  • 1 bunch of spring onions聽
  • 1 chili聽
  • 2 heads fennel聽
  • 6 garlic cloves聽
  • 1 tbsp fresh ginger聽
  • 1 1/2 lb/750g small potatoes聽
  • 1 yellow onion聽
  • 1/2/12cl cup honey聽
  • 1 tbsp coarse black pepper聽
  • 1 cinnamon stick聽
  • 1 star anise聽
  • 1 tsp Salt聽
  • 2 tbsp olive oil聽
  • 1 cup/25cl orange juice聽
  • 3/4 bottle/550 ml full-bodied red wine*聽
  • 2 cups/50cl beef stock (as needed)聽

Directions-

  1. Preheat the oven to 325掳F/170掳C.聽
  2. Cut meat into 2-inch/5cm pieces and pat dry. Season with salt and pepper.聽
  3. Heat the oil in the 鈥楽ublime鈥� Braiser over medium heat. Once hot, brown the meat on all sides (do not dry out) and set aside.聽
  4. Add the diced onions, the fennel heads cut in quarters, and the spring onions to the oil left in the braiser. Cook until golden.聽
  5. Add the garlic and the ginger, and cook for another minute, until fragrant.聽
  6. Stir in the sugar until it dissolves. Deglaze with the orange juice, red wine and honey.聽
  7. Add the bay leaves, cinnamon stick, star anise, and chili. Simmer until the alcohol from the red wine has burned off.聽
  8. With tongs, add the meat back to the braiser; it needs to be covered by the liquid (if necessary, add in beef stock until completely covered).聽
  9. Add the vegetables and the potatoes.聽
  10. Cover, transfer to the oven and cook for about 2 hours, basting every 30 minutes, until the meat is fork tender. Skim off the excess fat sitting on the surface of the braising liquid (If you can refrigerate the stew overnight, remove the solidified fat the next day.)聽
  11. Arrange the vegetables around the meat and spoon over some braising liquid. Serve straight from the 鈥楽ublime鈥� Braiser.聽

Tip: Add fresh herbs like thyme and a sliced hot pepper just before serving.聽

*Alcohol should be consumed in moderation聽
