Rustic Loaf

Prep time: 20 min, 1 hr 30 min rise time
Bake time: 55 min
Ingredients-
- 700 g all-purpose flourÂ
- 300 g whole wheat flourÂ
- 20 g / 2 tbsp. coarse saltÂ
- 10 g / 1 tbsp. dry active yeastÂ
- 570 g warm water, 40°CÂ
- 10 g butter for the bakerÂ
Directions-
- Heat the water to around 40°C.Â
- Mix the flour, salt and dried yeast in a mixing bowl.Â
- Pour in the warm water and knead together into a smooth ball of dough.Â
- Cover the bowl with a cloth and leave to rise for 30 minutes at room temperature.Â
- Grease and sprinkle flour over the inside of the loaf baker.Â
- Knead the dough again by hand to release the carbon dioxide.Â
- Shape it into a cylinder and place in the loaf baker.Â
- Put the lid on top and leave to rise for 60 minutes at room temperature.Â
- Pre-heat the oven to 240°C / Gas mark 8.Â
- Brush the top of the loaf with water.Â
- Sprinkle flour over the shaped dough and make incisions in the surface about ½ cm deep, without pressing down too hard.Â
- Put the lid on and place in the pre-heated oven.Â
- Bake for 45 minutes at 240-260°C.Â
- Leave to cool for 5-10 minutes out of the oven, then remove from the loaf baker.Â
